$60 meal plan for 1 week dinners only

(I follow this meal plan when I’m broke and we use up other stuff in the house for breakfast, snacks and lunches) – it’s just dinners – all bought at Coles

** we don’t manage on a litre of milk and 1 loaf of bread. These are on the list because they are used in the recipes

7 dinners all with vegetables for my family of 5 (me, 23yr son, 16yr son, 8yr daughter, 7 yr son)

Spaghetti Bolegnaise
Rissoles and vegetables
Vegetable pasties
Sausage rolls
Fried rice
Sausages and vegetables
Chicken stir fry with rice

2 tins savings baked beans 1.20
chicken stock cubes 1.09
ABC sweet soy sauce 2.20
3 tins savings diced tomatoes 1.80
1kg long grain white rice 1.50
spaghetti 0.65
1 litre coles long life milk 0.90

250g natures nutrients frozen spinach 0.99
1kg coles frozen peas carrots corn 3.00
1kg coles frozen peas carrots and cauliflower 3.00
1kg coles frozen corn cobs 2.50
500g coles frozen stir fry mix 2.20
1kg coles frozen puff pastry 2.50
250g coles butter pat 1.60

1.8 kg bulk pack barbeque sausages 8.00 (divide into 9 & 13)
1kg beef 3 star mince 8.00 (divide in 2)
500g chicken breast fillet (deli) 4.50
250g streaky bacon (deli) 2.88 (streaky has the least waste)

1kg bag carrots 1.30
2 zucchini 1.89
1kg bag onions 1.50
2kg bag potatoes 4.50

1 loaf savings white bread 0.85
1 dozen eggs 2.99

total $60.14

the only things not included are salt, pepper, oil (you could use some of the butter) and any herbs you’d like to use (I have a spice rack that includes garlic powder for the spaghetti sauce)

SPAGHETTI BOLEGNAISE
500g mince
3 tins tomatoes
1/2 the packet of spinach
2 carrots, grated
1 zucchini, grated
1 onion, diced
2 stock cubes
herbs & garlic (if you have these already)
500g packet spaghetti

RISSOLES AND VEGETABLES
500g mince
the other half of the packet of spinach
2 carrots, grated
1 or 2 finely diced or grated onions
3 slices of bread (made into crumbs and then made a bit soggy with a splash or 2 of milk)
1 egg
salt and pepper and any herbs that you may have

served with 1kg potatoes mashed with butter and milk
1/2 the bag of frozen peas carrots and cauliflower

VEGETABLE PASTIES

3 sheets puff pastry, thawed
1/2 bag frozen peas, carrots and corn
2 tins baked beans drained of most of their sauce (you could add this to the spaghetti sauce or put a bit in the sausage rolls if you don’t want to waste it)
salt, pepper and herbs if you have any

Mix the partially thawed vegetables with the drained baked beans. Add salt and pepper. Make into pasties with the pastry. Any leftover mixture is lovely on toast or in jaffles

serve with half the packet of corn cobs (and butter)

SAUSAGE ROLLS
3 sheets puff pastry, thawed
9 sausages (squeeze the contents out of the casings into a bowl)
1 onion grated or finely minced
2 carrots, grated
1 zucchini, grated
1 egg
salt, pepper and herbs if you have them

serve with the other half of the bag of corn cobs (and butter)

SAUSAGES AND VEGETABLES

13 remaining sausages
1kg potatoes (mashed with butter and milk)
the other half of the bag of peas, carrots and cauliflower

CHICKEN AND VEGETABLE STIR FRY

500g chicken breast cut into stir fry strips
bag of frozen stir fry vegetables
1 or 2 onions, sliced
if you have any carrots left grate or slice them
1 stock cube (disolved in about 1/4 cup boiling water)
2 or 3 tablespoons of the ABC soy sauce

cook 4 cups white rice (save at least half for the fried rice)

stir fry chicken and onions first, then add other vegetables and cook til done. Add the sauce and disolved stock cube. I would put garlic too if I had any

FRIED RICE

leftover rice
250g streaky bacon, diced
1 onion, diced
the other half a packet of frozen peas, carrots and corn
4 or more eggs, cooked like an omelette and then diced
ABC soy sauce to taste

fry the bacon and onion (the fat from the bacon should be enough for frying the onion). Add the frozen vegetables and heat through. If there’s not much fat in the pan add a little butter. Add the cold rice and stir fry turning constantly. Lastly add the chopped egg and ABC soy sauce to taste.

You will likely have some eggs left – my kids enjoy a fried egg on top of the fried rice

**I realise that many people don’t like to use frozen vegetables but I choose them because I live in a small town without a little fruit and veggie shop. Coles vegetable prices are too dear usually to buy fresh

  3. Love the meal my 3 under 3 haven’t refused anything so yummy. Only thing is some
    Of the products have gone up in price and need adjustments also more details on the recipes would be amazing but overall still cheap and yummy thanks for the delicious recipes
